Steel Pan Embodying De Buyer’s experience, tradition and prodigious culinary heritage, here is the steel pan, recommended for all high temperature cooking. The thickness of the steel is ideal for evenly distributing the heat needed to sear, grill and brown. The result is food that’s deliciously crisp and wonderfully tender.
A Steel Frying Pan, Perfect for Searing, Frying, Browning
- Advice
Heat the pan well before use. Once cooking is finished do not leave food in the pan. - Seasoning
A good steel pan is one which has been seasoned, meaning it has become black after being used several times. Cooking may then be done with very little fat. - Care
To ensure that the frying pan keeps its properties and in order to avoid oxidation, wash the pan in hot water without soap, then wipe it immediately with paper towel. It may then be oiled if you wish and stored in a dry place. - Technical Features:
”Blue” Steel is not painted or coated steel. It is simply a steel which has undergone a form of heat treatment which gives it its bluish color, and which protects it temporarily against oxidation. Carbon steel is particularly suitable for the strong heat sources in use in professional kitchens and for intensive use. The extra long handles made of iron or cast-iron are solidly fixed by riveting or welding. The French-style curving allows for easy manipulation and optimum grip. - Authenticity
Real “Lyon” frying pans have a very particular shape. They are high-sided, with a bell-shaped rim and rounded, with no sharp angles, allowing food to slide easily from the pan onto the plate. - Heat Sources
The steel pan is suitable with all types of heat sources including induction.
